Spicy chickpea and veggie gyros (vegan)

Gyros

INGREDIENTS

  • 1 can garbanzo beans

  • 1/2 shallot

  • Romaine lettuce

  • Cucumber

  • Tzatziki sauce - I buy Whole Foods Tzatziki garlic dill

  • Pita bread

  • Olive oil cooking spray

  • Olive oil

  • Sea salt

  • Black pepper

  • Garlic powder

  • Onion powder

  • Paprika

  • Cayenne

  • Lemon pepper

  • Dry thyme

DIRECTIONS

  1. Pre-heat oven to 350°F

  2. Drain and rinse the garbanzo beans then place them on a lined baking sheet, coat the sheet with with olive oil cooking spray.

  3. Drizzle olive oil over garbanzo beans and all the spices (sea salt, pepper, garlic powder, onion powder, paprika, cayenne, lemon pepper, dry thyme). Bake garbanzo beans for 25 minutes.

  4. Assemble your gyros -

    1. Add tzatziki to your pita bread, so that it covers majority of the pita

    2. Then add lettuce

    3. Add the garbanzo beans in the center of the lettuce

    4. Add cucumber to one side of the garbanzo beans

    5. Add your grilled shallots as garnish

    6. Top off with lemon pepper and a dash of cayenne
