Grilled romaine salad with a lemon garlic vinaigrette (vegan, vegetarian)

INGREDIENTS 
  • Head of romaine lettuce

  • 1/2 shallot

  • 1/2 juice from a lemon

  • 1 tablespoon olive oil

  • 1 tablespoon honey (or agave if vegan)

  • 1/2 tablespoon minced garlic

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper

  • Parmesan cheese (or nutritional yeast if vegan)

  • Preferred croutons (I use Trader Joe’s plantain croutons)

  • Chili flakes

DIRECTIONS
  1. Place washed lettuce on a grill pan for a few minutes - remove the lettuce once you see grill marks on it and place on your serving dish

  2. Add the shallot to the grill for a few minutes for the color to deepen. Add the grilled shallots to the plate with lettuce

  3. Make the vinaigrette - combine lemon, olive oil, honey, garlic, salt and pepper until well mixed (adjust to your liking)

  4. Drizzle vinaigrette over lettuce and shallots

  5. Add parmesan cheese, croutons and chili flakes to salad. Enjoy!
