Peach and burrata salad (vegetarian, gluten-free)

Peach and burrata salad
INGREDIENTS FOR VINAIGRETTE 
  • 1/2 shallot

  • 2 stems of fresh thyme - use as much / little as you’d like

  • 1/2 cup of balsamic vinaigrette

  • 1 cup of extra virgin olive oil

INGREDIENTS FOR SALAD
  • 1 lemon

  • 1 burrata ball

  • 2 peaches

  • 2-3 mint leaves

  • 1/2 teaspoon sea salt

  • Fresh cracked black pepper

PREPARATION
  1. Place balsamic, olive oil, and thyme in a small sauce pan over medium heat. Once simmering add the shallots and turn off stove. Let vinaigrette cool down.

DIRECTIONS 
  1. Cut lemon into thin slices. Remove seeds. Place slices on a plate - this will serve as the base of your salad. *You can eat the lemon as is, rind and all!

  2. Tear the burrata and place on plate, on top of lemons.

  3. Cut peaches into slices and scatter around plate.

  4. Drizzle the balsamic / olive oil / thyme / shallot vinaigrette over the salad.

  5. Finish salad with mint leaves, sea salt and fresh pepper.
