Tahini chocolate chip cookies (vegan, gluten-free)

INGREDIENTS
  • 1 cup almond flour

  • 1 cup tahini

  • 1/2 cup agave syrup

  • 3 tablespoon aquafaba (water from chickpeas)

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1 cup vegan chocolate chips

  • Sea salt flakes for topping

DIRECTIONS
  1. Preheat oven to 350*.

  2. Mix the almond flour, tahini, agave in a bowl.

  3. Use a spoon / fork or a frother to mix the aquafaba until it froths up. Mix into bowl.

  4. Add vanilla, baking powder and chocolate chips into bowl.

  5. Mix all ingredients together.

  6. Take a scoop of mixture and place on a cookie sheet / oven tray. Spray tray with olive oil cooking spray or apply ghee to prevent the cookies from sticking to the tray.

  7. Sprinkle sea salt to each cookie.

  8. Place cookies in oven for about 10-15 minutes (if you like really chewy, take out at 10min).
