Shrimp nachos (pescatarian, *contains dairy)

INGREDIENTS (serves 2)

  • 1 pound raw shrimp

  • 1/4 bag unsalted tortilla chips

  • 1/4 can refried beans

  • 1/2 large jalapeño

  • Green onions

  • Organic sharp cheddar cheese

  • Mi Rancho organic salsa verde

  • Sriracha

  • Minced garlic

  • Mike’s Hot Honey

  • 1 tablespoon olive oil

DIRECTIONS (20 minutes total)

  1. In a skillet, on low-medium heat, place shrimp with minced garlic, Mike’s Hot Honey, sriracha and olive oil. Let cook for about 10 minutes. There are no measurements for the garlic, honey, sriracha - add as little or as much as you’d like.

  2. While shrimp are cooking, place chips on an oven tray on top of parchment paper or aluminum foil.

  3. Add generous amounts of shredded cheddar, beans, jalapeño, and green onions. Let cook for about 10-12 minutes.

  4. Once chips are warmed up with all ingredients, add cooked shrimp on top, and some salsa verde. Cut up some green onion.

  5. Serve on a plate, enjoy!
