No bake energy balls (vegan)

INGREDIENTS

1 cup pitted dates

1 cup brown rice flour

1/2 cup coconut flour

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon agave

1 teaspoon maple syrup

1/4 cup rolled oats

1/4 cup shredded coconut

1 tablespoon cacao

1/2 cup oat milk

Extra shredded coconut and maple syrup to drizzle

DIRECTIONS
  1. Line a tray with parchment paper

  2. Chop pitted dates into small pieces

  3. Place all ingredients, minus the oat milk, in a food processor for a few seconds for them all to blend together

  4. Take ingredients out of the processor and place in a large mixing bowl. Add the oat milk and stir together until you have a dough-like mixture. The dough should hold together, if it doesn’t then add a tiny bit more oat milk

  5. Take a bit of the dough and roll them into energy balls until there is no dough left (I made 7 pretty big energy balls)

  6. Place energy balls on your parchment-lined baking tray and refrigerate for at least 3 hours

  7. Once energy balls have hardened, drizzle coconut shreds and more maple syrup over them

  8. Keep them in the fridge until they’re all gone :) they will last 2-3 days refrigerated
